In the saltworks of Ile d'Olonne, meet us, Quentin, Julien and Yohan, all three operators of our salt marshes located at the foot of the picturesque village of Ile d'Olonne. We harvest our salt there in the traditional way, using the same working techniques that have remained unchanged for centuries. The saltworks of Ile d'Olonne have existed for more than 1000 years. Our passion is to restore them while preserving their original structure. Our objective is to carry out the rehabilitation of old saltworks which were abandoned more than 50 years ago in order to highlight this unique ancestral heritage which made the history of Ile d'Olonne (formerly 4000 areas salt pans out of 140 salt pans).

Come and discover our salt marshes and the natural products that come from them: Coarse salt and fleur de sel whose harvesting techniques have not changed for several centuries.

The management of the play of the tides, the meticulous preparation of the salt pans on the beaten clay bottom accompanied by a good wind and strong sunshine are the secrets that ensure the summer harvest of a 100% natural product.
